This is a super simple recipe and my favorite way to make cauliflower. Even people who think they don't like cauliflower will most likely like it. Like most things, you just need to know how to make it right.
I made it to accompany some stewed eggplant curry and beef that was stewed with ginger and garam marsala, which is why I did a "curry" version. I often make it with just salt and pepper. You can add whatever spices you like- garlic powder, cumin, and paprika are in my rotation.
What you need:
1 head cauliflower, cut into small florets
Olive oil or oil oil spray
Salt and pepper
Curry Powder (or sub whatever spices you want)
Heat oven to 425 degrees Fahrenheit. Spray or lightly grease a 13" x 9" pan with olive oil. Spread cauliflower florets across the pan. Sprinkle with salt, pepper, and curry powder. Lightly drizzle or spray with olive oil. Toss everything around and make sure that it is evenly spread across the pan. Roast in the oven for about 12-15 minutes, stirring halfway through. If you leave it a little longer, it gets awesomely crispy (I couldn't do that this time because my apartment's smoke alarm is stupid sensitive, which is a bummer). You should get at least a little brown on it- much tastier that way!

Garlicky Mashed Cauliflower
Clearly, my cauliflower was purple. But you can use a normal one, of course. The only cauliflower they had this week were purple ones and I figured the color would be fun. This makes a much lighter substitute to the mashed potatoes one might normally serve with a steak. And, personally, I think it tastes better too! I made this a little too garlicky (not really sure that is possible, but I guess Rob thought so), but I you can just add as many or few garlic cloves as you like. Or, for a milder garlic flavor, you could roast a head first and just add that.
What you need:
1 medium/small head of cauliflower, cut into large florets
Salt
Garlic- for an intense garlic flavor, use raw cloves (I used 5-6, and that was garlicky to the point of spicy, yum! But probably too intense for anyone but the serious garlic fan). You can also sub in jarred minced garlic, garlic powder, or roasted garlic
2-3 tablespoons fat-free cream cheese (or regular/light, or sour cream)
Salt and Pepper
Bring an inch of water to boil in a large pot. Add a pinch of salt and the cauliflower florets. Cover and boil until cauliflower is very tender. Drain, squeezing out any extra liquid. Add garlic and cream cheese. Puree using an immersion blender, regular blender, or food processor. Season with salt and pepper to taste. Done!
I'll definitely be making this again- maybe try out a Parmesan cheese and herb version. Yum!

Crispy Parmesan Shrimp with Cauliflower-Beet Puree
This might be a bit of a weird mix, but I promise it was delicious together. And the beet puree was just lovely. I think it would also make a great accompaniment for steak or some other seafood. Or just by itself. Or maybe as a dip if you added a bit more spice to it... That may just be what happens with the leftovers.
The shrimp turned out pretty great- crunchy on the outside and still nice and juicy on the inside. They would be nice on a salad as well.
Let's start with the Cauliflower-Beet Puree.
What you need:
1 small cauliflower, cut into florets
3 medium beets, scrubbed, ends removed, and chopped into 1 inch pieces
Olive oil spray
Salt and pepper
1-2 cups almond milk (or regular milk)
1/4 cup walnuts, toasted
1/2 artichoke hearts
2 whole heads roasted garlic
Lemon juice
1 teaspoon coriander
1 teaspoon onion powder
Start by roasting the vegetables: Spread beet and cauliflower pieces out on a olive-oil sprayed baking sheet. Season with salt and pepper. Roast at 350 degrees Fahrenheit for an hour, stirring once.
Now, place your roasted vegetables in a saucepan and add one cup of almond milk. Bring to a boil and then simmer over medium-low heat for 20 minutes (this helps tenderize the beets so that they will blend a little better. You could simmer them for longer if you want it to be really smooth, but I like a little texture to my puree). Take off heat, add the remaining ingredients, and puree with an immersion blender. Add more salt and pepper to taste.
Now, for the Crispy Parmesan Shrimp:
What you need:
3/4 pound shrimp, peeled and tails removed (mine with medium)
1/3 cup flour
1/4-1/3 cup shredded Parmesan
1/2 cup Italian breadcrumbs (or plain, but then add a bit of an Italian seasoning blend in with the crumbs)
1/2 cup Panko breadcrumbs
1 teaspoon lemon-pepper seasoning
1-2 teaspoons garlic powder
1/2 teaspoon black pepper
1/2 cup Egg Beaters (or just use a couple of whole eggs or some egg whites, beaten)
Place your flour in one bowl and your Egg Beaters in another. Mix the Parmesan, both breadcrumbs, the lemon-pepper seasoning, the garlic powder, and the black pepper in another bowl. Heat your oven to broil on high. Spray a baking sheet with olive oil. Dip each shrimp first into the flour, then the Egg Beaters, and finally into the bread crumb mixture. Place on baking sheet. When all of the shrimp have been breaded, broil for 6-8 minutes, flipping halfway through. The shrimp should be browned and cooked through (I cut through one with a knife to make sure).
Serve with Cauliflower-Beet Puree and Creamy Pesto Sauce (see below). Enjoy!
Creamy Pesto Sauce:
Mix the following together:
- 2 tablespoons low-fat mayonnaise
- 1/4 cup plain yogurt
- splash of lemon juice and Worcestershire sauce
- 1-2 tablespoons store-bought pesto

"Fake" Mashed Sweet Potatoes
....or I guess you could just call it Cauliflower, Carrot, Sweet Potato, and Cottage Cheese Puree.. But that sounds too scary.
What you need:
1 head of cauliflower, cut into bite-size pieces
Olive oil spray
Salt and pepper
1/2 of a large sweet potato (or maybe 1 small), cut into chunks (for me, 4 largish chunks)
1/2 of a large (and I mean LARGE) carrot, cut into large chunks
1 cup Silk coconut milk (or normal milk, maybe 1 %)
1/2 cup chicken broth
1 cup 1 % cottage cheese
1/2 cup shredded parmesan cheese
Pepper, garlic powder, and Season-All
Heat oven to 425 degrees Fahrenheit. Boil potato and carrot in a SALTED pot of water until fork-tender (I really don't know how long this took... I was doing other things at the time and just let it happen). Spread cauliflower over a lightly sprayed baking sheet and season with salt and pepper. Bake until lightly browned and cooked through... about 30 minutes.
Place cooked potatoes, carrots, and cauliflower in a bowl. Add milk, broth, cottage cheese, and parmesan cheese. Puree with an immersion blender until (somewhat) smooth. Add seasonings to taste. Enjoy!
I was making steak for dinner and wanted to make an appropriate side dish... Potatoes! But I don't like potatoes. Really, I think they're nasty (unless in fried form, which isn't necessarily suited to dinner).
So I thought... sweet potatoes! But then I'm thinking, too many carbs. Sooooo.... I'll mix in some veggies! And that's what I did. But, it wasn't quite what I was hoping for. It just needed something... delicious and fatty.

Cauliflower-Mushroom Soup
And the soup obsession continues...
For lunch today, I finished up my soup leftovers from the previous two soups I posted and was sad that I would have no more leftover soup for lunches. Solution: make more soup!
I served this with Spicy Barbeque Shrimp and decadently topped it with bacon, goat cheese, and fried onions.
What you need:
1 medium head of cauliflower, cut into bite-size pieces
Olive oil spray
Salt and pepper
1-2 tablespoons butter
1 small onion, chopped
1 leek, sliced
1/2 head of garlic, peeled and chopped
1 portobello mushroom
8 ounces button mushrooms
1/2 cup dry white wine
4 cups chicken broth
1/4 fat free cream cheese
1/2 cup milk of choice
1 teaspoon apple cider vinegar
Toppings: bacon, crumbled goat cheese, fried onions
Start by roasting the cauliflower: Heat oven to 425 degrees Fahrenheit. Spray a baking sheet with olive oil and spread cauliflower florets across it. Spray again and sprinkle with salt and pepper. Roast for 25-30 minutes (flipping once or twice), or until cauliflower is cooked through and slightly browned.
Melt butter in a large pot over medium-low heat. Add onions, leek, garlic, and a hefty pinch of salt to the pan. Cook until softened and then add the mushrooms. Cook for a few more minutes until the mushrooms are softened. Add the white wine and deglaze the pan. Add the broth and roasted cauliflower. Bring to a boil and then let simmer for 20-30 minutes. Turn off heat. Add cream cheese, milk, and vinegar. Puree with an immersion blender until smooth. Add salt and pepper to taste (I only needed to add pepper).
Top with the bacon, goat cheese, and fried onions if you like. Enjoy!

Macaroni and Cheese with Bacon, Cauliflower, and Four Cheeses
Macaroni and Cheese, or any pasta dish for that matter, is not really my thing. But Rob wanted some, so I was happy to come up with something that I thought he'd like. I used bleu cheese, swiss cheese, and a mix (which I think is cheddar and mozzarella). I'd recommend using a variety because it will give you a nice depth of flavor, but use whatever types of cheese you want. And trust me, you can't taste the cauliflower at all, so it's a good way to sneak in a bit of nutrition.
What you need:
1 bag frozen cauliflower
Olive oil spray
Season-all (or just salt and pepper)
Garlic Powder
Salt and pepper
8 ounce box of macaroni, cooked al dente
1 medium onion
7 slices of bacon
1.5 cups milk
3 eggs
3-4 ounces EACH bleu cheese, swiss cheese, and mixed cheese blend (or whatever combination you like, just make it add up to around 11 ounces)
1 teaspoon hot sauce
1/2 cup Panko crumbs
Start by roasting the cauliflower: I did mine in the toaster oven, but a regular oven will also work. Or, if you want to save time/effort, skip this and just use the thawed cauliflower as it is. If roasting, spread on a lightly greased baking sheet, sprinkle with Season-all (or salt and pepper), and bake at 425 degrees Fahrenheit until lightly browned. I didn't let mine thaw first, so it took a bit longer, but if it is already thawed, this should take 15-20 minutes. Let cool and chop finely
Next, fry the bacon in a large frying pan over low heat. Place the cooked bacon on a paper towel and dump all but a very thin coating of the bacon grease out of the frying pan. Use this leftover fat to fry up the onion. Once the onion is translucent and slightly browned, add the bacon back in (crumbling it as you go), and then add the cauliflower to the pan. Add a half cup of the milk and use this extra moisture to scrape up the browned stuff from the bottom of the pan. Turn off the heat.
Whisk the eggs and the other cup of milk together in a large bowl. Add about 3/4 of each cheese to the eggs and milk. Add the bacon mixture, hot sauce, and cooked macaroni. Season with salt, pepper, and garlic powder. Pour it all in a 9 x 9 baking pan and then top with the panko and the rest of the cheese. Bake at 375 degrees Fahrenheit for 30 minutes, or until bubbly and lightly browned. Enjoy!

Cauliflower "Breadsticks"
Saw these on a low carb blog and wanted to give 'em a try. I keep meaning to do the cauliflower pizza crust thing, but never end up getting to it. Here's a compromise.
To be honest, they did not turn out quite like I expected and definitely stuck to the pan. But they were tasty and pretty healthy, and I'm pretty sure I'll make them again. I just need to get a food processer when I get off Saba and that will make it a lot easier.
What you need:
One (small to medium) head of cauliflower
2 eggs
1/4 cup shredded cheese ( I used a "pizza" blend- I would have used either low-fat mozzarella or cheddar or low fat anything if they had it here)
2 Tablespoons fat-free Greek yogurt
Salt (maybe a teaspoon?), pepper to taste, dried oregano, garlic powder
Heat oven to 350 degrees Fahrenheit. Grease a 13 x 9 pan with olive oil cooking spray (or maybe a full coating of olive oil- mine stuck pretty badly). Cut the core out of the cauliflower and purree the rest in a food processor or dice it REALLY finely by hand (which is what I did- messy, time-consuming, but possible, even for an impatient person like me). Mix cauliflower and the rest of the ingredients and then press into pan. Bake for 20-30 minutes, or until browned around the edges. Then flip and bake for another ten minutes (at 400 degrees instead). Cut into pieces and serve with a marinara sauce.
Enjoy! (and don't stress if it fall apart a bit when flipping. mine did too, but it was still tasty!)
